There is nothing quite like the magic of backyard pizza night. The aroma of fresh dough, bubbling cheese, and perfectly blistered crust can transform an ordinary evening into something memorable. But if you’ve ever tried making pizza in a conventional home oven, you’ve probably experienced the limitations: a pale crust, uneven browning, and none of the signature texture that makes authentic pizzeria pizza so special.
The secret is heat. Traditional Neapolitan pizzas are cooked at temperatures approaching 900°F, allowing the crust to puff dramatically while developing the characteristic charred spots and airy interior that pizza enthusiasts love.
That’s why we’re firing up the Ooni Karu 16 Multi-Fuel Pizza Oven for today’s bake. The Ooni Karu 16 became the first pizza oven designed for home use to receive a recommendation from the Associazione Verace Pizza Napoletana (AVPN), the international authority on authentic Neapolitan pizza.
Whether you prefer the subtle wood-fired flavor of hardwood and charcoal or the convenience and precision of gas, this guide will walk you through creating a custom pizza that rivals what you’d find at your favorite pizzeria.
Step 1: Fire Up the Oven
The secret to authentic Neapolitan pizza is combining extreme heat with a fully heated pizza stone.
1. Choose Your Fuel
If you love that authentic, subtle wood-fired aroma, load the fuel tray with high-quality hardwood kindling or charcoal. If you prefer low-maintenance temperature control, install the optional gas burner attachment and fire it up.
2. Preheat
Close the glass door and allow the oven to heat thoroughly. The Ooni Karu 16 can reach temperatures up to 950°F (500°C) in approximately 15–20 minutes, depending on fuel type, weather conditions, and airflow.
3. Check the Stone Temperature
Don’t rely solely on the air temperature. For the best results, the pizza stone should be fully saturated with heat before launching your pizza.
Pro Tip: Use an infrared thermometer to verify the center of the stone is between 750°F and 850°F before baking.
4. Monitor the Temperature
The mounted digital thermometer makes it easy to keep an eye on the oven’s internal ambient temperature throughout the cook.
Step 2: Stretch & Build Your Pizza
While the oven is heating up, it’s time to build your custom creation.
1. Dust the Surface
Generously sprinkle flour onto your countertop and pizza peel.
Pro Tip: Semolina flour works especially well on the peel and helps prevent sticking when it’s time to launch.
2. Stretch, Don’t Roll
Gently press your dough ball from the center outward, leaving a slightly thicker lip around the edge for the crust (cornicione). Avoid using a rolling pin, which removes many of the air pockets that help create a light, airy crust.
3. Sauce and Top
Spread a thin layer of sauce across the dough and add your desired toppings.
Keep it light. High-temperature pizza performs best with fewer toppings.
If using fresh mozzarella, pat it dry with paper towels first to reduce excess moisture.
Pro Tip: Give your pizza peel a gentle shake after topping. If the pizza slides easily, you’re ready to launch. If it sticks, carefully lift the edge and add a little more flour underneath.
Step 3: The Bake
This is where the magic happens.
1. The Launch
Open the oven door. The spacious 16-inch cooking area gives you plenty of room to maneuver. Aim for the center of the cordierite stone, tilt the peel downward, and use a confident forward-and-back motion to slide the pizza onto the stone.
2. Watch the Flame
Close the door and monitor the pizza through the large glass viewing panel. You’ll be able to watch the crust rise, blister, and develop color without opening the oven and losing heat.
3. Rotate
After approximately 20–30 seconds, use your peel to rotate the pizza so it cooks evenly on all sides.
4. Finish the Bake
Continue baking for another 30–60 seconds, depending on the style of pizza, thickness of the dough, and amount of toppings.
When finished, the crust should be beautifully blistered and lightly charred, while the cheese is fully melted and bubbling.
5. Retrieve
Slide the peel completely underneath the pizza and carefully remove it from the oven.
Step 4: Slice and Enjoy!
Allow your pizza to rest on a cutting board for 1–2 minutes before slicing.
Because the Ooni Karu 16 cooks at extremely high temperatures, it creates a crust with a crisp exterior and a light, airy interior, qualities that are difficult to achieve in a traditional kitchen oven.
Whether you’re making a classic Margherita or experimenting with BBQ chicken and hot honey, mastering high-heat pizza cooking can completely transform your backyard pizza nights.
