How to season a griddle

Seasoning a brand-new Blackstone griddle is the single most important step you will take as an owner. Think of it exactly like caring for a cast-iron skillet: seasoning burns a thin layer of oil directly into the steel pores, turning the bright gray metal into a pitch-black, naturally non-stick cooking surface that protects against rust.


If you don’t season it first, your food will stick like cement and the metal will rust. Here is the foolproof, step-by-step guide to doing it right the first time.

The Proper Tools You Need

The Seasoning Oil: You need an oil with a high smoke point. Blackstone Griddle Seasoning & Cast Iron Conditioner is the gold standard, but you can also use standard Avocado oil, Canola oil, or Flaxseed oil. Avoid butter or olive oil for the initial seasoning, they burn too easily.


Heavy-Duty Tongs: You will use these to hold your wiping cloths so you don’t burn your fingers on the scorching hot metal.


Blue Shop Towels: Regular kitchen paper towels tend to shred and leave white lint all over your sticky griddle top. Heavy-duty blue shop towels (found in auto or hardware aisles) stay perfectly intact.


Dish Soap & Warm Water: This is for the initial clean only.


Two Squeeze Bottles: Fill one with clean water (for steam cleaning later) and one with your cooking oil.

Step 1: The One-Time Soapy Scrub

Take some warm water mixed with a few drops of dish soap and gently wash the entire metal griddle plate.


Important Note: This is the only time you will ever use soap on your Blackstone. It is strictly done to wash away factory dust, oils, and shipping residue. Rinse it thoroughly with clean water and dry it completely with a towel.

Step 2: The Pre-Heat (Watch it Darken)

Turn your propane tank on, turn all the griddle burners to High, and walk away for 10 to 15 minutes. The steel plate is going to get incredibly hot and will physically start changing color, turning a brownish-gray.

Step 3: Apply a Micro-Thin Layer of Oil

Squirt a small amount of your seasoning oil onto the center of the griddle. Grab your tongs, pinch a folded blue shop towel, and rub the oil all over the griddle surface.


The Secret: Wipe it down as if you accidentally spilled the oil and are trying to clean it all up. Your layer needs to be micro-thin. If you leave thick puddles of oil, they will cure into a sticky, gummy mess that chips off later. Don’t forget to wipe the inside and outside walls of the metal top!

Step 4: Let it Smoke Out

With the burners still on high, the griddle will start billowing thick smoke. This is exactly what you want, the heat is bonding the oil to the steel. Sit back and watch it burn off. Once the smoke completely stops (usually about 10 to 15 minutes), your first layer is officially baked on.

Step 5: Repeat 3 to 4 Times

One round isn’t enough to build a solid non-stick barrier. Repeat Steps 3 and 4 three or four more times. Squirt a tiny bit of oil, wipe it paper-thin with your tongs, and let it smoke all the way out.


With every single layer you add, you will watch the metal transform from a patchy brown into a beautiful, shiny, pitch-black mirror finish.
