The Griddle Breakfast Burger

Serves enough for 2 people

Ingredients:

  1. 400g ground beef (minced beef)
  2. 4 burger buns
  3. 4 frozen hash browns
  4. 8 slices streaky bacon
  5. 200g sliced, cooked sausage
  6. 4 slices of cheese (Cheddar or American)
  7. 1 tbsp vegetable oil
  8. Salt (to taste)
  9. Optional: Hot sauce, ketchup, or brown sauce

Directions:

  1. Fire Up the Griddle: Preheat your griddle or large frying pan to medium-high heat and lay down the vegetable oil.
  2. Smash the Hash Browns: Toss the frozen hash browns onto the cooking surface. Press them down gently to give them a “smashed” texture, flipping occasionally until they are golden and crispy.
  3. Sizzle the Meats: Add the bacon and cook until perfectly crispy, letting all that flavorful fat render onto the griddle. Toss on the sliced sausage just long enough to heat through and get a light sear.
  4. Soak Up the Flavor: Slide your hash browns directly into the rendered bacon and sausage fat to let them soak up all that extra savory goodness.
  5. Smash the Patties: Divide your beef into 4 equal portions. Drop them onto the griddle, smash them down into thin patties, and hit them with a light pinch of salt.
  6. Flip & Melt: Cook the beef until the edges are dark and crispy. Flip the patties over and immediately top each one with a slice of cheese so it gets perfectly gooey.
  7. Toast & Assemble: Toss your buns face-down on the griddle to lightly toast them. To build, start with the bottom bun, layer on the cheesy beef patty, and top with the smashed hash browns, bacon, and sausage.
  8. Sauce & Serve: Finish it off with a drizzle of your favorite sauce, cap it with the top bun, and serve it up hot!

The Classic Griddle Smashburger

Ingredients:

  1. 480g 80/20 ground beef (divided into 6 even 80g portions)
  2. 6 soft burger buns
  3. 6 slices American cheese
  4. Salt (to taste)
  5. Optional: Your favorite burger sauce

Directions:

  1. Fire Up the Griddle: Preheat your Blackstone to high heat and lay down a light coat of oil.
  2. Prep the Beef: Gently roll your ground beef into 6 even balls. Don’t overwork the meat, keeping it loose gives you the best texture!
  3. Sizzle & Smash: Place the beef balls on the hot griddle, leaving plenty of space between them. Let them sear for 10–15 seconds, hit them with a pinch of salt, and use a heavy spatula or burger press to smash them incredibly thin.
  4. Crust is King: Let the patties cook undisturbed for 60–90 seconds. You are looking for a deep, dark brown crust to form on the bottom.
  5. Flip & Melt: Scrape hard under that crust to flip the patties, then immediately drop a slice of American cheese on each one so it gets perfectly gooey.
  6. Steam the Buns: Toss your buns cut-side down on the griddle. Add a quick splash of water next to them and drop a basting dome over the top to lock in the steam and warm them up.
  7. Assemble & Serve: Build your burgers, add a swipe of your favorite burger sauce, and serve them hot off the griddle!

The Spicy Turkey Ham Breakfast Sandwich

Ingredients:

  1. 8 slices of sandwich bread
  2. 8 slices of turkey ham
  3. 4 eggs
  4. 4 slices of American cheese
  5. 1 small onion (thinly sliced)
  6. 2–3 Serrano peppers (sliced)
  7. 1 tomato (sliced)
  8. Lettuce (shredded or leaf)
  9. Mayonnaise
  10. 1–2 tbsp vegetable oil
  11. Blackstone All-Purpose Seasoning
  12. Salt and black pepper (to taste)

Directions:

  1. Fire Up the Griddle: Preheat your Blackstone to medium heat and lay down the oil.
  2. Sauté the Heat: Toss your sliced onions and Serrano peppers onto the hot oil. Sauté them until they are softened and lightly browned, then slide them over to a cooler zone on the griddle.
  3. Toast the Bread: Spread mayonnaise on both sides of your bread slices. Drop them onto the griddle and toast until perfectly golden and crisp, then set them aside.
  4. Sear the Ham & Veggies: Lay your turkey ham down and sear until lightly browned on both sides. Right next to it, give your tomato slices a quick grill until they soften and pick up light grill marks.
  5. Fry the Eggs: Crack your eggs directly onto the griddle for a sunny-side-up finish. Hit them with the Blackstone All-Purpose Seasoning, salt, and pepper. Just before they finish cooking, drop a slice of American cheese on each egg so it gets perfectly gooey.
  6. Assemble & Serve: Build your sandwich! Add a fresh swipe of mayo to your toasted bread, then layer on the cheesy egg, grilled tomatoes, spicy onions and peppers, two slices of seared turkey ham, and crisp lettuce. Cap it, slice it, and serve it hot!

Ingredients:

  1. 4 Mission Mini Tortillas
  2. 1 jar Lotus Biscoff Spread
  3. 2 packets Lotus Biscoff Cream Sandwich Cookies
  4. 4 tbsp mini marshmallows (plus extra for topping)
  5. 50g unsalted butter

Directions:

  1. Prep the Tortillas: Spread a thick, generous layer of Biscoff spread across one side of all four tortillas.
  2. Build the Sweet Heat: Roughly chop up one packet of the Biscoff cookies and sprinkle the pieces evenly over two of the tortillas. (Save that second packet for later!) Toss a handful of mini marshmallows over the crushed cookies, then cap them with the remaining two tortillas to build your quesadillas.
  3. Fire Up the Griddle: Preheat your Blackstone to medium heat and melt the butter directly onto the cooking surface.
  4. Toast to Perfection: Drop the quesadillas onto the melted butter. Let them cook until the bottom is a perfect golden brown, then carefully flip. Toast the second side until the tortillas are crispy and the marshmallows inside are perfectly melted and gooey.
  5. Slice & Serve: Pull them off the heat and let them rest for just a minute so they don’t fall apart. Slice them into wedges, drizzle with extra Biscoff spread, and top with the reserved crushed cookies and a few fresh marshmallows. Serve them warm!

The Griddle Hot Ham & Cheese

Feeds 2 (Heavy)

Ingredients:

  1. 4 thick slices of bread (Texas Toast or Sourdough work best)
  2. 1/2 lb thinly sliced deli ham (Black Forest or Honey Ham)
  3. 4 slices of melting cheese (Swiss, Gruyere, or sharp Cheddar)
  4. 2 tbsp butter (or mayonnaise for an extra-crispy crust)
  5. 1 tbsp Dijon mustard
  6. Optional: Sliced pickles

Directions:

  1. Fire Up the Griddle: Preheat your Blackstone to medium-low heat. (Keeping the heat a bit lower ensures your bread gets perfectly toasted without burning before the cheese melts).
  2. Sear the Ham: Toss the thinly sliced ham directly onto the griddle in two separate, loose piles. Let it sizzle for 1–2 minutes just to get it hot and slightly caramelized on the edges.
  3. Melt the Cheese: Fold the hot ham into neat little stacks. Drop two slices of your chosen cheese right on top of each ham pile. Add a quick splash of water next to the piles and cover them with a basting dome for 30 seconds to get that cheese perfectly gooey.
  4. Prep the Bread: While the cheese is melting, spread butter (or mayonnaise) generously on one side of all four slices of bread. On the non-buttered side, add a quick swipe of Dijon mustard if you like a little tang.
  5. Assemble on the Heat: Place all four slices of bread butter-side down on the griddle. Use your spatula to carefully scoop up the melty ham-and-cheese stacks and drop them onto two of the bread slices. Cap them with the remaining bread (butter-side up).
  6. Toast to Perfection: Grill the sandwiches until the bottom is a deep golden brown and crispy (about 2-3 minutes). Give them a careful flip, toast the other side until it matches, slice them diagonally, and serve them hot!
